These chicken mini breast fillets grill quickly, making them perfect for an easy midweek meal. Chicken is naturally low in fat and calories while also being packed with protein, so simply grill or fry and serve with a light salad or grilled vegetables, or add to a stir fry, for a delicious and healthy meal.Chicken is also an excellent meat to try out different spices and herbs due to the delicate flavour of the meat. For an easy Mediterranean style marinade, mix Italian style herbs with olive oil and lemon juice to marinade the meat. Then simply grill and serve with a couscous salad for a perfect summer meal.
Cooking guidelines from defrosted: allow product to defrost for a minimum of 24 hours in the fridge. Once fully defrosted, remove from the fridge and leave at room temperature for 10-15 minutes prior to cooking. Remove the chicken from the packaging and pat dry with kitchen paper. Heat a heavy based frying pan or griddle pan on a medium - high setting. Once hot add a little oil or alternatively brush oil directly onto chicken then sear the chicken on all sides for 3½ - 4½ minutes. Ensure the chicken is piping hot throughout, and the juices run clear when the thickest parts are pierced with a skewer, if not keep cooking for another minute and check again. Once fully cooked, place on a rack, loosely cover with foil and leave to rest for 2-3 minutes before serving. Cooking appliances vary in performance; these are guidelines only.
