In partnership with Praveen Kumar, this dish has origins in Bengal before being developed into the classic British Indian restaurant favourite we know today. The name refers to the way spices and onions are tempered in oil to bring out the full range of flavours and aromas, before being enriched in a hearty tomato sauce. Made with chunks of lamb, this dish is perfect for a restaurant experience at home without the hassle.

OVEN: Fan 170°C / Electric 190°C / Gas mark 5. Remove sleeve and pierce film 3 times. Place on tray in centre of oven and heat for 45 mins, stirring after 20 mins. Rest for 2 minutes before serving
MICROWAVE: (850w)
Remove sleeve and pierce film 3 times. Microwave at full power for 3 mins, stir gently and microwave for another 3 mins. Rest for 2 minutes before serving
