Defrost Spatchcock Poussin for 12 hours in your fridge.
Preheat your oven to 200°C/Fan 180°C/Gas 6.
Remove Spatchcock Poussin from packaging, pat dry.
Place on a baking tray lined with baking paper, season with salt and pepper, and drizzle with olive oil.
Cook in the oven for 20-25 minutes.
Leave to rest for 5 minutes in a warm place.
Serve immediately.
